The Acquavite di Pere Cotogne (quince brandy) produced by Azienda Agricola Bianchi is a spirit of exceptional quality that captures the essence of one of the rarest and most prized fruits of our land.
Production: after harvesting the ripe quince pears, maceration and fermentation take between 5 and 7 weeks, the initial stage of a process that transforms the alcohol into acetic vinegar.
Aromatic characteristics: a synthesis between the structure of brandy and the aroma of grappa. It is distinguished by its fruity finesse, reduced alcoholic pungency and great complexity of flavour.
Pairings: it can be enjoyed neat, as a digestif after dinner or while relaxing and meditating at the end of the day.
