The Macerato was born from a shared passion for wine with two friends, Mattia Germano and Marco Conte. An exciting wine with a yellow-orange color, cloudy because it is unfiltered, and made 100% solely from grapes.
Grape variety: Souvignier Gris and Solaris.
Vinification: grapes macerated on the skins for 3 weeks with spontaneous fermentation in stainless steel and aged for 4 months in 3rd-passage barriques. This product is obtained respecting the principles of BioSuisse certified organic agriculture.
Geography: vineyards located in Val Mara, on the slopes of Monte Generoso with a predominantly western exposure. Well-draining soil with a limestone base rock, featuring surface fragments of alpine origin and porphyry. Production of 750 g/m2.
Aromatic characteristics: wine with a slightly orange color. Complex olfactory profile with notes of apricot and spices. On the palate, it recalls the same scents perceived on the nose-predominantly apricot and hints of incense-with a perfect balance of acidity and minerality, a light tannin that provides freshness, and a persistent finish.
Pairing: thanks to its versatility, it can accompany various dishes. It pairs perfectly with spicy dishes, aged cheeses, and structured fish-based courses.
