Cerus Red Wine is one of the most distinctive creations of Azienda Agricola Bianchi, located in Arogno, in the heart of Cantone Ticino.
Grape variety: interspecific variety from the Cabernet Sauvignon family (vb-91-26-25) and Divico.
Vinification: grapes aged for 24 months in barriques, 50% of which in new barrels and 50% in 2nd and 3rd fill barrels. This product is obtained respecting the principles of BioSuisse certified organic farming.
Geography: vineyards mainly located in Val Mara, on the slopes of Monte Generoso with western exposure. The soil is well-draining with a limestone base, but with surface fragments of alpine origin and porphyry.
Aromatic characteristics: garnet-red wine, structured and enveloping, distinguished by notes of undergrowth and concentrated fruit, mainly black berries.
Pairings: ideal to accompany grilled meat main courses or game and aged cheeses.
Ageing potential: a wine best enjoyed whilst still fresh and youthful, but capable of developing positively over 2–4 years, during which time it gains greater complexity whilst retaining a pleasant liveliness.
Optimal serving temperature: 17–19°C
