Cerus is one of the most distinctive creations of Azienda Agricola Bianchi, located in Arogno, in the heart of Canton Ticino.

Grape varieties: interspecific variety from the Cabernet Sauvignon family (VB-91-26-25) and Divico.

Winemaking: aged for 24 months in barriques, with 50% new barrels and 50% second and third-use barrels. This product is crafted in compliance with certified BioSuisse organic farming principles.

Geography: vineyards mainly located in Val Mara, on the slopes of Monte Generoso with western exposure. The soil is well-draining with a limestone base, but with surface fragments of Alpine origin and porphyry.

Tasting notes: a garnet-red wine, structured and enveloping, distinguished by notes of undergrowth, concentrated fruit, mainly black berries, and spicy hints derived from ageing in wood.

Food pairings: ideal for accompanying grilled meat main courses, game and aged cheeses.

Ageing potential: a wine best enjoyed while still fresh and youthful, but capable of developing positively over 2–4 years, during which time it gains greater complexity while retaining a pleasant liveliness.

Optimal serving temperature: 17–19 °C
