Our organic quince brandy is unique.

We harvest the quinces when they are ripe and turn them into this fine distillate with an intense fruity aroma. Maceration and fermentation can vary between 5 and 7 weeks.

Enjoy an introduction to bees life followed by a personal “meet & greet” with our hive. You will be provided the appropriate head to toe suit. We will inspect a hive  and you will be a testimony that honeybees are the heartbeat of not only our agriculture, but a healthy, biodiverse environment.

Picaia, organic red wine merlot from Ticino

Grapes and Vinification:

100% Merlot, vinification in stainless steel, 15-day fermentation, whole berry.

Tasting characteristics:

Intense ruby colour, with a wide fruity palette on the nose, raspberry and cherry in particular.
In the mouth it is drinkable and elegant, accompanied by a good freshness and strong fruity notes.

Pairings:

A wine that suits very well both at the beginning of the evening with an aperitif of cured meats and with a risotto.

To be consumed between 16 and 18°C, slightly cooler than an ordinary red.

Assemblaggio Bianco Piaz, white wine in French oak

Grapes and Vinification:

Chardonnay and Sauvignon, fermented and aged in second passage barrels

 

Tasting characteristics:

In the glass it has a straw yellow colour with light golden reflections, then on the nose there are olfactory sensations of Golden apples, gooseberries, boulangerie and a slightly smoky touch given by the wood used.

 

Drinking it, it contrasts an intriguing fresh and savoury note with a warmer part of structure and softness that create an ideal harmony on the palate that prolongs the drinking pleasure.

 

A wine to be left to mature over time, identified in its typical elegance (like the rest of the estate’s wines).

 

Food pairing: smoked trout, Mediterranean tuna tartare with coastal citrus fruits

Marà del lago, Sparkling Rosé Wine

The Marà del Lago is a beautiful soft coral pink colour, crystal clear, with a fine but at the same time captivating bubble.

The first nose reveals notes of small fruits, wild strawberries and currants with a succession of different aromas, from yeast to vanilla.

In the mouth it gives its best, with a delicate approach and a creamy, enveloping bubble.

None, White Wine Barrel Aged

Grapes and Vinification:

100% Solaris, vinified in barrique, fermentation at low temperatures and ageing for 7 months in barrique.

Tasting characteristics:

Visually it is a straw yellow coloured wine, brought to the nose it is complex, with a clear expression of citrus scents and tertiary notes given by the toasting of the wood.

On the palate there is a perfect synchrony between acidity and minerality, the wood in this wine enriches its already initial depth and brings a continuous and refined drinking pleasure.

A wine that over time acquires structure, persistence and depth.

Marinated and/or smoked fish starters

Piaz Merlot, Merlot Switzerland’s Italian Region

Awards: 93 points at the Decanter Award in London and 2nd place at the Mondial du Merlot, Grand Master category in Zurich

Grapes and Vinification:
100% Merlot, fermented and macerated in conical logs in wood for 40 days, aged in barrels for 15 months.

Tasting characteristics:
A ruby red coloured wine, on the nose an immediate wine that focuses its olfactory notes on the freshness of the fruit and the spiciness.

On the palate it is a fresh wine, balanced between hardness and softness of taste, with tannins present but still elegant with a beautiful fruity expression.

Medium structured and in perfect harmony with the nose.

Pairings:
Meat-based first courses, e.g. risotto with Ticino lard and aromatic herbs or luganighetta.

Syrah Piaz Red Wine Barrel Aged

Grapes and Vinification:

100% Syrah, fermented and macerated in conical logs in wood for 40 days, aged in barrels for 15 months.

Tasting characteristics:

Ruby red coloured wine, on the nose it is a soft wine which shows its spicy qualities after some time left to oxygenate, deep and which over the years will show its full potential.  Tasted we find a wine with good acidity, tannins present but well dosed and a deep persistence that only time will reveal.

Food pairings:

Second meat dishes such as lamb gigot, Swiss beef tenderloin with pepper.

Aromatic vinegar

Our vinegar is aged for over a year in oak barrels together with a mother (starter), which will convert the alcohol into acetic acid. To ensure oxygen supply during the aging process, the vinegar will be aerated several times.

After this treatment the liquid will be seasoned for 2-3 weeks with a mix of herbs, giving a unique flavour to the vinegar, very suitable for preparing vinaigrette dressing.

Technical data sheet:

Colour: light amber.
Taste: rather full, persistent.
Aroma: intense, but characteristic of the flower.
Properties: particularly indicated for expectorant herbal teas, in colds, sedative and calming.

Grappa barricata

Our grappa is aged for almost a year in oak barrels previously used for storing red wine.

Thanks to this particular processing, unique of its kind, our grappa can obtain a distinctive organoleptic profile not only regarding the taste, but also visually, getting a rose-colored appearance.

Nocino

Nocino is a typical dark brown liqueur of Ticino and its recipe has been handed down from generation to generation.

Our nocino is made from our homemade grappa (distilled spirit) and flavoured with walnut husk, sugar and spices. To get ready to drink, it must undergo maturation in demijohn for almost a year, so that released substances can result in an incomparable flavour.

Cerus, Red Wine Barrel aged

Grapes and Vinification:
Interspecific variety of the Cabernet Sauvignon family, barrel-aged for 13 months.

Tasting characteristics:
Garnet-red coloured wine, the aromatic baggage is rich and varied with multiple nuances of ripe red fruit, undergrowth and soil.

The range of flavours corresponds to the nose, where acidity and sapidity have a perfect link with the tannins and the structure of the wine.

A harmonious and elegant wine.

Food pairing:
Grilled/second courses of braised meat.

Alma, White Wine

Grapes and Vinification

70% Johanniter and 30% Solaris, the wine is fermented in stainless steel and a small part is aged in wood.

Tasting characteristics:

In the glass it is a straw yellow wine with greenish reflections, on the nose there are olfactory sensations of flowers, green fruits and aromatic herbs.

Tasted it is a fresh wine, with a slight minerality and which on the finish leaves the palate with a light toasted and citrus sensation which after several minutes is also rediscovered on the nose.

Slightly structured, elegant and fine.

Pairings:

Fish first courses (tagliolini with whitefish) and cold white meat dishes (chicken salad with pomegranate and rocket pesto).
